I might want to install oil cooler line to M20 engine.

What would be the best place to tap them? one would be return oil at the oil sump?

Just take the whole oil cooler assembly from an E30 325i

Both are essentially the same thing. The factory unit actually uses a thermostatic device, allowing the oil to remain at a preset temp before allowing it to flow thru the cooler. The aftermarket unit may be easier to set up unless you have the complete system from an e30, which may stil need modifications to work in the e21 chassis.
